Būmu is a chic downtown hangout modeled on a Japanese izakaya. Joaquin Baca, formerly of Brooklyn Star and Momofuku, and his team of chefs work in the open kitchen artfully plating raw scallops with bacon jam and hamachi layered with pickled watermelon and avocado. There are cooked dishes too, such as wok-fried pea leaves with black garlic and skillet-cooked okonomiyaki topped with smoked tobiko, Benton’s bacon and Duke’s mayonnaise. The drinks menu includes thoughtful cocktails, natural wines and pages of sake.
