The seductively lit Oka, in Murray Hill, is led by chef-owner John McCarthy, who worked for Wylie Dufresne at wd~50, travels often to Japan for culinary research and is a certified sake sommelier. His innovative, seasonal menu includes hamachi crudo and beef tartare, fried chicken with sesame mayo and tender, crisp tonkatsu (pork cutlet).
