Description

The 2019 Food Waste Fair features innovative chefs, policy experts and businesses in conversations and demonstrations on food waste reduction, showing how one chef’s castoffs are the raw ingredients for another’s main course—or for gourmet compost. The previous fest’s discussion topics included donating leftover food, achieving zero waste and pioneering upcycling initiatives like the Billion Oyster Project, which is restoring New York Harbor’s oyster habitat. This year’s Zero Food Waste Challenge promises delicious entertainment as chefs try to concoct the best dish from discarded ingredients.
