Pair blue, yellow, red or purple corn varietals with triangular tetelas, quesadillas, and crispy tlayudas with cheese and black bean, chicken, or mezcal mushroom toppings (there’s plenty here for vegans and vegetarians). Wash them down with an iced horchata or atole (a milkshake-thick corn drink). The gorditas are especially popular for breakfast.
