Pickling, fermenting, curing and foraging for local ingredients are cornerstones of Nordic cuisine, and each process comes vividly to life at N’eat—a Nordic eatery (get it?) in the East Village. Chef Gabriel Hedlund—a Swede who’s worked at Noma in Copenhagen—partnered with Mathias Kær, a Danish restaurateur, to open the lovely, clean-lined space. Their timing couldn’t be better, given the mania for Nordic hits like Aska and Agern. The à la carte menu (dinner only) includes wild mushrooms with roasted sourdough; cured scallops and mussels; and braised short rib with pickled huckleberries and smoked marrow.
