Description
Jean-Georges Vongerichten's abcV (“V” stands for vegetables) is a radiant outgrowth of Flatiron gems ABC Kitchen and ABC Cocina. The bathed-in-white showroom has a bar and communal standing table up front; in the rear is a dining room facing the windowed kitchen. Good knife skills are key for chefs here, and the dice is precise on yams and broccoli stems dotting beluga lentils flavored with black vinegar and sneaky heat from chili oil. Diners can substitute shaved crudité for pita to scoop up drop-dead gorgeous kabocha squash dip. The beverage menu is creative and wide-ranging.
