Description
Comal, located on Manhattan's Lower East Side, celebrates the vibrant spirit of the cuisine in Mexico City. The menu is built around peak-season produce from the Northeast US, thoughtfully grown and sourced from small farms, alongside sustainably caught seafood and heritage meats. Comal was founded by Gaz Herbert, who was born in Cuernavaca, Mexico. His time there and in Mexico City has given him a strong sense of connection to the city’s welcoming hospitality and culinary creativity. Comal is also a culmination of these experiences in Mexico, as well as his exposure cooking in London’s diverse dining scene. Every dish aims to create a deep sense of flavor, harnessing the fresh and sustainable ingredients that New York City has to offer, and utilizing their curated pantry of chiles, spices, and other ingredients from across Mexico.
