Masato Shimizu (Jewel Bako) came up with the menu at this minimalist sushi joint, where the decor is spare, clean and contemporary. This isn't your average Japanese restaurant: a seven-course tasting menu will run you $120, a tuna flight costs $75 and the prix-fixe lunch, which changes daily, is $29. But the expense is worth it, especially when it comes to unique menu selections such as marbled sole, grunt fish and Japanese shad.
