Description
The 5,000-year-old art of cheese making is on display at Beecher's Handmade Cheese, where you can see pasteurization at work. The milk comes from small local herds that are not treated with bovine growth hormones. Beecher's is known for its mac and cheese, developed at its flagship operation in Seattle's Pike Place Market. On the same level as the cheese kitchen are a high-end retail store, coffee bar, cases of cheese and charcuterie, diverse prepared foods and grilled-to-order cheese sandwiches. The cellar downstairs offers a menu of freshly made salads, seasonal soups, pasta, braised short ribs and cheese plates, with a wine list that focuses on the West Coast and includes a few nods to New York State producers as well.
