This modern Apulian osteria offers roasted cardoncello mushrooms, an aromatic delicacy from Southern Italy, with potatoes, caciocavallo cheese and truffle tortino. The mushrooms also turn up in turmeric fettuccine and alongside slow-braised beef cheeks and black truffle mashed potatoes.
