Teaming up with Roberto Caporuscio of Kesté Pizza and Vino, Starita creates a robust menu of wood-fired pies covered in homemade mozzarella, featuring more than sixty variations on the theme, ranging from the traditional to the fanciful, like the "Night and Day Calzone" pie, with ricotta, mozzarella and ham on the inside of the crust and topped with tomato sauce, mozzarella, pecorino and basil.
