As a kid, Flynn McGarry began hosting pop-up tasting diners in California and New York, giving him the moxie to open Gem, his first permanent venue, at 19. By day, it’s a minimalist café known as the Living Room—offering coffee, croissants and sweet potato cake with pumpkin seeds. At night, the Living Room becomes a convivial holding pen for those heading into the Dining Room next door, with its inventive, $155 tasting menu. Gratuity is included but wine pairings are extra.
