Next to the venerated Murray’s Cheese on Bleecker Street is a pop-up spin-off we hope becomes permanent. Murray’s Mac & Cheese is a fast-casual storefront sporting big picture windows and framed cheese art. Behind the counter is a pan of golden-topped macaroni and cheese to be customized with more cheese, vegetables, meats, sauces and toppings. The carbonara is particularly divine, thick with fontina, mozzarella, peas and smoky pancetta. It comes in four sizes–the “snack mac” portion is plenty filling.
