While poké—the Japan influenced, Hawaiin born, Los Angeles hyped trend—is itself a simple recipe, this Chelsea restaurant allows diners the chance to complicate things a bit. The menu offers standard takes on the dish, or customers can opt to build their own bowl:  pairing ahi tuna, tofu, salmon or a blend of two proteins with a selection of veggies, their choice of sauce and an array of toppings. Those selections are placed on a base of rice or, for an unorthodox twist, zucchini noodles. This isn’t exactly fast food, but the vibe and style is chill and informal. Step into the narrow, unassuming space and place your order at the counter, then grab at seat at the communal table that runs nearly the length of the eatery.
