Saxelby Cheesemongers specializes in domestic American cheeses, especially those from the Northeast. The selection at the narrow little Essex Market stands changes frequently, but recent finds include the Moses Sleeper from Jasper Hill, a rich and creamy cow’s cheese, and the raw-milk, semihard Goat Tomme from Twig Farm. Keep an eye out for curds from Meadow Creek, a southern Virginia dairy that makes cheese from the milk of pasture-raised cattle.
