Combina translates as to combine in Spanish and creative solution in Hebrew, which aptly explains the cuisine at this hospitable SoHo bistro. Chef-owner Einat Admony (Taïm, Balaboosta, Bar Bolonat) channels her interest in the culinary connection between Israel and Spain, serving tapas-size plates with Middle Eastern flourishes. Look for salted-cod doughnuts with smoked paprika aioli, pickled mussels with matzo, harissa-honey drumsticks with labneh, a merguez burger with feta and shavings of orange persimmon carpaccio decorated with squid ink and sunflower seeds. It's grazing food, attractively plated, and goes along with the scenery—which includes a broad marble bar and shelves displaying glowing pantry supplies and liquor bottles.
